The following toffee recipe for the Passover / Pesach festival adds a fun twist for the kids! Many toffee recipes exist, but the following toffee square recipe adds chocolate chips to the toffee recipe for an extra sweetness as well as to please the chocolate lover.

Passover Toffee Squares Recipe

1 cup (2 sticks) butter, softened
1 cup granulated sugar
1 egg
1 teaspoon vanilla 1/4 teaspoon salt
1 cup matzo cake meal
1 1/2 cups milk chocolate chips

Instructions for the Passover Toffee Squares recipe:

  1. Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius or Centigrade).
  2. In a large bowl, beat butter and sugar together until light and fluffy.
  3. Add egg; beat well.
  4. Blend in vanilla, salt and cake meal, mixing well.
  5. Lightly grease the bottom and sides of a 10-by-15 inch (25.40-centimeter-by-38.10-centimeter) jellyroll pan; spread the dough evenly into the pan.
  6. Bake for 20 minutes.
  7. Just before cookies are done, melt chocolate chips on high power in the microwave, stirring every 30 seconds.
  8. Remove cookies from the oven; spread at once with the melted chocolate.
  9. Let cool, then cut into squares.

Yield: 3 to 4 dozen (2-inch or 5.08 centimeter) toffee squares.
