For the stuffing:-
200 gms sabudana
100 gms peanuts coarsely ground
2 potatoes boiled & cut into cubes
2 green chillies
1 tsp jeera
a handful of corriander leaves chopped
salt to taste
2 tsp amchoor powder
For the dough :-
2 cups white flour
water for kneading
oil
Method :
1. Wash sabudana, soak in water for 20 minutes & then cover & keep in a damp muslin cloth for 2 hours.
2. Warm 1 tbsp oil in a pan, add jeera, green chillies & add all the remaining ingredients for the stuffing & mix well. Keep stirring for 15-20 minutes on a low flame
3. Add corriander leaves. Put off the flame & let the mixture cool.
4. If desired, you could make sabudana wadas out of this mixture or use it as a filling for making samosas.
5. Serve hot with corriander or mint chutney, supplemented by the yummy tamarind chutney.
