Vegetable Biryani



Ingredients :


2 cups Basmati rice
1 cup yogurt
2 onions
1 tbsp butter
a few flowerets of cauliflower
1/4 cup peas
2 carrots
2 potatoes
1/4 cup beans
2 black cardamons
1 tsp shah-jeera
3 bay leaves
cinnamon
3-4 cloves
3-4 peppercorns
a pinch of saffron soaked in milk / water
2 tsp ginger-garlic paste
1 tsp cumin powder
2 tsp garam masala powder
1 tsp chillie powder
salt to taste
ghee for deep frying onions
a handful of corriander leaves finely chopped

Method :


1. Mix together yogurt, chillie powder, garam masala powder & ginger-garlic paste & marinate the vegetables in this paste for atleast an hour.

2. Cook rice. When done, put the saffron in it. Set aside.

3. Deep fry onions till golden brown. Set aside.

4. Heat butter in a pan, add cloves, cinnamon, cardamons, peppercorns, cardamons, shah-jeera & bay-leaves. Finally, add the vegetables & stir-fry till done.

5. Grease a baking dish & arrange alternate layers of the prepared rice & the prepared vegetables. Bake at 250 degrees F for 15 minutes.

6. Garnish with fried onions & corriander leaves. Serve hot with raita.
