Spicy Burrito Casserole



Spicy Burritto Casserole

Ingredients:
1--1 lb. ground meat
2--12 to 3/4 pkg. of soft corn tacos
3--I can of refried beans
(or left-over red beans smashed with
a potato masher added with 1/2 can of
diced tomatoes with green chilies.
4--left-over red meat balls and spagetti sauce
or red meat sauce;
or a can of ready canned or jarred red sauce. 5--2 pkgs. of taco seasoning mix
6--1 lg. pk. of Mexican blend shredded cheese
(large shreds)
7--1 cup frozen stir fry veggies
(onions,green peppers,red sweet peppers)
or fresh chopped peppers & onions.
8--minced garlic or garlic powder to taste
9--onion powder to taste
10-1/2 cup water
11- 1 teasp.red hot sauce
Directions:
Brown ground meat with onions & peppers all together.
Drain grease.
Then add 1 pk. of taco seasoing mix with water
(follow direcions on the pk.) Set aside. Heat until boiling
(following pk. directions) and set aside.
Heat red sauce added with one pk.of taco seasoing mix
and one teasp. of hot sauce
Heat about 5 to 8 min on a low fire
with 1/4 cup water added. Set aside.
Heat red beans with 1/4 cup water added
with 1/2 can of diced tomatoes with green chilies.
Cook for about five to 8 min.on a low fire. Stir some.
Set aside.
Spray cooking oil in a 9 or 10 in. baking pan.
I used a large iron fry pan.
(Round or square pan doesn't matter.)
Then line the bottom with the soft taco rounds
and cover entire bottom (about 6 rounds.
Then add all of the red bean mixture and spread evenly.
Then repeat layering taco rounds on top.
Then add the all meat mixture ; spreading evenly.
Then add 1/2 pk. of cheese evenly.
Then repeat spreading taco rounds
on top making three layers now.
Then add all of the red sauce mixture spreading evenly again.
Then add the other 1/2 of the shredded cheese on top .
Bake about 45 min on 350 oven.
Serve with tossed green salad.
