Cajun Gumbo

Serves 6-8
Ingredients:
Use any chicken pieces
(legs, thighs, breasts ect.)
(If using breast meat cut meat into bite sizes)
I lb. sausage(any kind) 1 can small mushrooms(optional)
1/3 cup soy sauce
1/2 red bell pepper(cut up)
1/2 green bell pepper(cut up)
1 large chopped onion
1 tbls. minced garlic, fresh garlic cut up, or
Garlic powder to taste.
1/2 fresh chili hot pepper cut up
(optional) 2 tbls. tabasco sauce
4 tbls. of worstisheire sauce.
4tbls. chicken bouillion powder
or 4 cubes of chicken bouillion
4 tbls. soy sauce
1/2 -1 cup flour
1/2 cup cooking oil
4-6 freshy cut carrots
3 diced potatoes
Black pepper to taste
Salt to taste
1 cup cooked rice
6-8 cups water

Directions:
Brown chicken in some cooking oil.
Set aside
Do not brown the sausage.
Add more oil to the pot and make a roux.
Take the flour and cook over a low to
medium heat for five to ten minutes.Stir constantly)
(Be careful not to burn)
Add all chopped seasonings.
Add the chicken
and cut up raw sausage; add to the pot.
Add carrots and potatoes
Add water
Sir and cook about 30 minutes on a medium fire. Serve over cooked rice with crackers or french bread
