EASY SWEET POTATO PIE
ingredients
3 large sweet potatoes
1 cup sugar
3 eggs
1/2 cup milk
1/2 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1/2 cup butter, melted
1 (9-inch) graham cracker pie crust
directions
Boil sweet potatoes in their jackets until tender. While still warm,
remove skin and cut the
tips off.
Place potatoes, sugar, eggs, milk, cinnamon, nutmeg and butter in a large
bowl. Whip with
electric mixer until reaching the smoothest consistency you can.
Pour into the graham cracker crust and bake in 350 degree oven for 30 to
40 minutes or until
the filling is set.
