Soak beans overnight. Next day drain, add garlic, bay leaf and water to cover. Bring to a boil. Lower heat and simmer until tender, (approx an hour and a half). Fry bacon and drain. Fry linguisa for 10 minutes and drain. Put linguicia and bacon in with the beans and simmer for two minutes. Remove bay leaf and serve over white rice.
Grease a 10x10" casserole dish. Layer with one half the tortilla chips. Heat oil in a skillet, saute onion and bell pepper. Drain, and sprinkle over tortilla chips in dish. Sprinkle on tomatoe, red pepper flakes, and half the cheese. Top with remaining tortilla chips.
In a small bowl, mix together eggs, milk, peppers and garlic powder. Pour over tortilla chip mixture. Top with remaining cheese.
Bake at 325° for 25 minutes or until egg is set.
Boil corn on the cob in sugared water. Yes, sugared, not salted. Salt makes the corn tough. Sugar sweetens it. Use about 1 tablespoon sugar.
When the corn is done, slather with about 2 teaspoons mayonaisse per cob, sprinkle generously with packaged parmesan cheese and sprinkle with chili powder. Serve immediately.
Into your steamed tortilla layer rice, beans, and chicken. Top with salsa, sour cream, and cheese. Add guacamole if desired.
In a festive serving dish layer the ingredients in the order given. Chill. Serve with tortilla chips.
