Filling: 8 oz. softened cream cheese, 1/3 cup sugar, 1 beaten egg, 6 oz. semisweet chocolate chips. Batter: 2 1/4 cups flour, 1 1/2 cups sugar, 1/2 cup cocoa, 1 1/2 tsp baking soda, 1 1/2 cups water, 1/2 cup oil, 1 1/2 tsp vanilla 1/2 tsp vinegar (it sounds gross, but you really need the vinegar) Directions: Beat cream cheese and sugar until well creamed. Beat in egg. Fold in chocolate chips. Set aside. Mix flour, sugar, cocoa and baking soda together then add water, oil, vanilla and vinegar. Beat VERY thoroughly. Use mini-muffin pans with paper liners. Fill less then 2/3 full with chocolate batter. Drop approx. 1/2 tsp of filling on top. Bake in preheated 350 degree oven for 20 mins or until toothpick comes out clean. Cool briefly then remove from rack. Makes 6 dozen. Don't forget to visit the rest of the site or my blog Unicycle.
