Baked Zucchini and Sour Cream
4-6 oz Sour Cream
Zucchini (unpeeled and sliced into rounds)
Shredded Cheddar Cheese (I prefer sharp)
Salt and Pepper
Preheat oven to 350 degrees. Boil zucchini until just tender and drain. Arrange cooked zucchini in an ungreased casserole dish. Spoon on enough sour cream to cover and coat the zucchini. Add salt and pepper to taste. Top with shredded cheddar. Bake 25 minutes or until cheese is melted and dish starts to bubble.
