Favorite Goodies Recipes
If your like us, christmas time is when you have lots of extra goodies. Here are some recipes for some of our favorites. Hope you enjoy them!!!!
~~~ROCKY ROAD MARSHMALLOW CANDY~~~
1 package (12oz.) semi-sweet chocolate chips
1 cup chunky-style peanut butter
3 cups minature marshmallows
1/4 cup chopped nuts
Microwave chocolate chips & peanut butter on high 2 to 3 minutes, until melted, stirring after each minute. Fold in marshmallows & chopped nuts. Spoon into a greased 9" square pan. Chill until firm & cut into squares.

~~~SCRATCH CAKE~~~
4 cups flour
3 cups sugar
3 tsp. rounded, baking powder
2 tsp. cinammon
2 eggs
1/2 cup oil
2 & 1/2 cups milk
Mix all ingredients together. Pour into 13"x 9" pan. Bake at 350 degrees for 40-50 minutes or until done.

~~~BANANA PUDDING~~~
1 1/2 cups sugar
5 heaping Tbsp. flour
4 or 5 egg yokes (hold whites)
3 cups milk
1 tsp. vanilla
Banana's
Graham crackers
Mix flour & sugar together. Put 2 cups of milk into mixture. Add yokes to last cup of milk. Mix all together. Add vanilla. Cook on stove to thicken, stirring constantly. Then layer graham crackers, pudding, & banana's to fill pan. Beat egg whites with 2 Tbsp. vanilla and 2 Tbsp. sugar. Beat till stiff peaks form (about 6 minutes). Put on top of pudding mixture. Bake at 450 degrees till brown.

~~~COCONUT CRUMB CHERRY PIE~~~
1 9" ready to bake pie shell
1 can (21oz) cherry pie filling
1/2 cup all purpose flour
1/4 cup sugar
1/4 cup oleo, melted
1 cup coconut
Bake pie shell at 450 degrees for 5 minutes. Bring pie filling just to a boil in saucepan. Pour into warm pie shell. Meanwhile, combine flour & sugar. Stir in oleo. Add coconut & stir with a fork until mixture is crumbly. Sprinkle evenly over pie filling. Bake at 375 degrees for 20-25 minutes, or until lightly browned. Cool.

~~~DREAM PIE~~~
2 envelopes Dream Whip
2 3/4 cups cold milk, divided
1 tsp. vanilla
2 pkg. (4oz) Jello instant pudding, any flavor
1 graham cracker pie crust
Beat whipped topping mix, 1 cup of milk & vanilla in large bowl with electric mixer on high speed, 6 minutes or until topping thickens & forms peaks. Add remaining milk & pie filling mixes, beat on low till blended. Then beat on high 2 minutes, scraping bowl occosionally. Spoon into pie crust. Refrigate at least 4 hours. Store in refrigator.

~~~PECAN PIE~~~
3 eggs, slightly beaten
1 cup sugar
2 Tbsp. butter, melted
1 tsp. vanilla
1 1/4 cups pecans
1 9" unbaked deep dish pie crusted, thawed
Preheat oven to 350 degrees. In large bowl, stir first 5 ingredients until well blended. Stir in pecans. Pour into pie shell. Bake 50-55 minutes or until knife inserted halfway between center and edge comes out clean. Cool

~~~POPCORN BALLS~~~
4 Tbsp. oleo
1 cup brown sugar
1/2 cup white corn syrup
2/3 cup Eagle Brand milk
1/2 tsp. vanilla
5 quarts popped popcorn
In saucepan, combine butter, brown sugar & corn syrup. Stir well & bring to a boil over medium heat. Stir in sweetened milk, simmer, stirring constantly till mixutre forms a soft ball (236 degrees) when dropped in cold water. Stir in vanilla. Pour over popcorn and form into balls.

~~~REMARKABLE FUDGE~~~
4 cups sugar
2 5oz. cans evaporated milk
1 cup oleo or butter
1 12oz. pkg. semi-sweet chocolate chips
1 7oz. jar marshmallow cream
1 cup chopped walnuts
1 tsp. vanilla
Line a 13x9x2" baking pan with foil, extending foil over edges. Butter foil, set aside. Butter sides of a heavy 3 qt. saucepan. In it, combine sugar, milk, & oleo. Cook & stire over medium-high heat to boiling. Clip andy thermometer to side of pan, making sure it doesn't touch the bottom. Cook & stir over medum-high heat to 236 degrees, soft ball stage (about 12 minutes). Remove saucepan from heat, remove thermometer. Add chocolate chips, marshmallow cream, nuts & vanilla. Stir till chocolate melts. Spread into pan. Score nto squares while warm. When firm, cut into squares. Store in refrigator. Makes about 3 1/2 lbs.

~~~CHOCOLATE-PEANUT BUTTER-OATMEAL COOKIES~~~
2 cups sugar
1 stick of margarine
1/2 cup of milk
1/2 cup of peanut butter
4 Tbsp. cocoa
1 tsp. vanilla
3 cups quick cook oats
Mix first six ingredients together. Bring to a good boil, cook to soft ball stage, then turn off burner. Add oats & mix well. Spoon out onto wax paper to size of cookies you want & let cool & set up.

~~~PEANUT BUTTER--CHOCOLATE CHIP COOKIES~~~
1/2 cup butter
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup creamy peanut butter
1 egg
1 tsp. vanilla
1 1/2 cups flour
1 tsp baking soda
1/4 Tbsp salt
1 12oz. pkg. semi-sweet chocolate chips
Preheat oven to 350 degrees. Beat butter & sugars together until light & fluffy. Blend in peanut butter. Mix in egg & vanilla. Stir well. In another bowl, stir flour, baking soda & salt together, then mix into peanut butter mixture until well blended. Add chocolate chips and mix well. Drop by teaspoon onto cookie sheet, about 2" apart. Bake for 12-15 minutes until lightly brown. Remove from cookie sheet & place on wax paper to let cool.
