Greetings and Salutations
Chefs and Chef-wannabes. I am the Kitchen Bard spinning you a tapestry
of delicious recipes that ANYONE can make. Personally I like to listen
to Audio Books while I cook and while trying out these recipes I had When
the Wind Blows by James Patterson in my headphones.I highly recommend this
audio. Five stars. Now back to the recipes. These were all sent to me by
my sweet friend (with a sweet tooth) Brandon "MoMo" Cole then tested out
in my kitchen by me.
This first recipe is for
all you dieting persons it is Low Fat Tiramisu Cheesecake. It was submitted
to me by my lovely friend Brandon "MoMo" Cole (of course).
Here's What You Need:
2 pk (8 ounces ea.) fat-free cream cheese
1 pk (4 ounces) sugarfree instant vanilla pudding mix
2/3 cup dry milk powder
1 cup cold coffee
1 teaspoon Brandy extract
3/4 cup Cool-Whip Lite
1 (6 ounce) prepared chocolate pie crust
2 tablespoons unsweetened cocoa
DIRECTIONS:
In a large bowl, stir cream
cheese with a spoon until soft. Add dry pudding mix, dry milk powder and
coffee. Mix well using a wire whisk. Blend in brandy extract and 1/4 cup
Cool Whip Lite. Spread mixture into pie crust. Evenly drop remaining
Cool Whip Lite by tablespoon to form 8 mounds. Sprinkle chocolate chips
over top. Refrigerate for at least 1 hour. Cut into 8 servings.
Yield: 8 Servings
1/2 cup (125 ml) lemon juice
1/4 cup (60 ml) orange juice
1/4 cup (60 ml) sugar
1 tsp (5 ml) finely chopped lemon zest
1/4 cup (60 ml) water
1 egg white
[Note: This recipe calls for an uncooked egg white. If salmonella contamination is a concern in your area, then it is best to skip this recipe.]
Combine the lemon juice, orange juice, sugar, lemon zest, and water in a small bowl and stir to dissolve the sugar.
Ice cream maker method:
Cover the citrus mixture
and refrigerate for 2 hours, until well chilled. In a separate bowl,
beat the egg white until stiff and fold into the chilled citrus mixture.
Pour into an ice cream maker and freeze according to the manufacturer's
directions.
Food processor method:
Pour the citrus mixture
into ice cube trays and freeze. Place the frozen mixture in an electric
food processor and add the beaten egg white. Process until smooth.
Serves 4.

1 tsp (5 ml) olive oil
4 Tbs (60 ml) chilled butter, cut into small pieces
1 cup (250 ml) all-purpose flour
1/4 tsp (1 ml) salt
5 Tbs (75 ml) ice water
2 large baking apples, peeled, cored, and sliced very thin
2 Tbs (30 ml) honey
1 Tbs (15 ml) lemon juice
1/2 tsp (2 ml) dried thyme leaves
Brush the olive oil onto
a cookie sheet with no sides, or on the bottom of a jelly roll pan.
Combine the butter, flour, and salt in a food processor and pulse until
a coarse meal is formed. Add the water and process until the dough
forms a ball. Form the dough into a thick, flat disk, wrap
in plastic wrap, and refrigerate for 30 minutes. Roll out the
dough directly on the oiled cookie sheet, forming a circle about 14 inches
(35 cm) in diameter.
Combine the apples, honey,
lemon juice, and thyme in a bowl and toss to combine well. Arrange
the apple slices on the pastry, leaving a 1 to 2 inch (3 to 5 cm) border
all around. Fold the border over the apples to form a rustic crust.
Pour any remaining honey-lemon juice mixture over the apples. Bake
in a preheated 400F (200C) oven for about 1 hour, until the crust is golden
brown and the apples are tender.
Serves 6 to 8.
2 cups sifted flour
2 cups sugar
3 heaping Tbsp cocoa
1/2 tsp salt
1 stick oleo
1/2 cup oil
1 cup Coca-Cola
1/2 cup buttermilk
1 tsp baking soda
2 eggs
1 tsp vanilla
1 1/2 cups small marshmallows
Sift together flour, sugar, cocoa, and salt. Set aside. Bring to a boil the oleo, oil, and Coca-Cola and add to the flour mixture. Then do this...... add buttermilk, baking soda, eggs, and vanilla. Beat until smooth, then fold in the marshmallows. Bake at 325 degrees F. for 25 - 30 minutes in sheet cake pan.
COKE ICING
Bring to a boil 1 stick oleo, 6 Tbsp Coca-Cola, and 4 Tbsp cocoa, then
add 3 cups powdered sugar, 1 tsp vanilla, and 2 cups nuts. Ice cake while
still warm.
