Collared Greens

Many people cook them with bacon, in the bacon grease. Often, they are cooked with red or white small whole potatoes.
My recipe is similar to Angie Davis' one right here:

New Style Collard Greens

Have all the flavor of traditionally prepared collard greens, without all of the fat that is normally added!

* 2 bunches (about 4 pounds) collard greens
* 6 cups water
* 2 pounds smoked turkey wings, cut at the joints
* 2 teaspoons salt
* 1 or 2 dried red peppers or 1/2 teaspoon ground red pepper (cayenne)
* 1 clove garlic, mashed
* 1/2 teaspoon sugar
* 1 tablespoon olive oil

Cut through the stems and yellow leaves from the collard greens and discard. Gently rub the leaves with your fingers under running warm water. Cut the greens into large pieces. Let the leaves soak in warm, salted water for 10 minutes. Rinse with cool water and drain in collander.

In a large pot, bring the water to a boil. Add the collard greens , smoked turkey wings, salt, red pepper, garlic, sugar, and olive oil. Reduce heat, cover, and simmer over low heat for 1 1/2-2 hours, or until the greens are tender. Stir occasionally and add hot water to cover the greens as needed.
