SCRAMBLED EGG AND VEGGIES FRITTATA
1 large egg, beaten
1 Tbsp. Half and Half Milk
2 Tbsp. diced orange bell pepper
2 oz. jar drained diced pimentos
2 Tbsp. frozen corn niblets
2 Tbsp. frozen green peas
salt and black pepper to suit your taste
Use a Nordicware Microwave Scrambled Egg Pan with the attached plastic lid, both interior sections sprayed with butter spray. Beat one large egg with 1 Tbsp. Half and Half milk. Stir in diced orange bell pepper, drained pimentos, corn niblets, and green peas, and microwave on high for 1 minute 15 seconds. When it's done, top with one slice Kraft white American Cheese or sprinkle on some shredded cheese you like, and put it on a breakfast plate. Serve with a 4 oz. diced tropical fruit cup or cherry mixed fruit cup or bowl of fresh fruit sliced with plain yogurt over the top, a large glassful of Not From Concentrate Orange Juice, Jam, Jelly, or Preserves, and warmed Butter Croissants or Toast.
Makes a delicious and satisfying, special meal for breakfast, brunch, lunch, dinner, or a hearty snack. You can make it frugal or fancy.
You can buy this inexpensive top-rack-dishwasher-safe pan online at www.KitchenCollection.com or at your local Walmart. I recommend buying at least four of them, even if you live alone, because there are so many uses for them. You can microwave individual servings of cakes, pies, cookies, or brownies in them, microwave vegetables, reheat rolls or cornbread, or reheat cooked meats.
When you cook a scrambled egg in this pan, it rises up, and lifts up the lid while it's cooking in the microwave, then it goes back down when it stops. That's why you need to spray both section's interiors with butter spray, so nothing sticks, and it slips right out of the pan easily to your waiting plate. If you cook more than one egg at a time, just make sure you don't scramble over two eggs at a time and double the cooking time. One scrambled egg will cook to perfection in 1 minute 15 seconds on high in the microwave. This recipe looks just like a miniature skillet frittata that is for one person instead of several people like a skillet frittata would be cooked on the stovetop and then placed in the oven to melt the cheese and cook the topside. Eggs and veggies are a frugal meal. Salsa, Picante, Sriracha, or hot sauce can be added as a topping, if desired. You could also add Jimmy Dean precooked turkey sausage crumbles if you want some meat, or cook two slices of turkey bacon in between white paper towels for two minutes in the microwave on high. A side of chunky fried potatoes, battered in some self-rising cornmeal and fried in vegetable oil then drained on white paper towels, goes nicely with this meal, as well as a sliced tomato, with salt and black pepper to suit your taste. A 4 oz. applesauce cup goes well, if you don't have a fruit cup or yogurt to use. Coffee, Creamer, and Green Tea can also be served.
