CHOCOLATE BUFFET SUGGESTIONS AND RECIPES



If you are the type who likes to make everything from scratch, you will find some excellent links to chocolate recipes on this site. Buy whatever you can afford of your favorite chocolate, cherry, and strawberry foods ready-made and keep them on hand to have for your Chocolate Buffet whenever you feel the need to treat or pamper yourself. Valentine's Day is a good day for this buffet, especially if you are going to be alone. Chocolate contains over 400 compounds that give the brain a feeling similar to being in love. It can be addictive if enough is eaten. However, chocolate is not limited to any day, so feel free to use these suggestions anytime you have the need to feel loved.

Here is one of my favorite special recipes to make at home:
Buy a box of Betty Crocker's Supreme Walnut Brownie Mix. In a microwavable bowl, put 4 Tbsp. Brownie Mix, 1 Tbsp. vegetable oil, 4 Tbsp. cherry syrup or strawberry syrup, and 2 Tbsp. chopped walnuts, mixing to combine. Place in microwave on high for 2 minutes or until center is set and sides are beginning to pull away from the bowl. Remove and add more syrup and cherries or strawberries on top, then finish it with canned whipped cream, and enjoy your treat.

Purchase frozen Tru Chocolate Covered Strawberry Halves at your grocery store, and keep them in your freezer to have whenever you want them. Dole makes frozen Chocolate Banana Chunks and frozen Chocolate Covered Pineapple chunks. Dole makes 6 oz. cans of Pineapple Orange Banana Juice that taste great when you keep them chilled in your refrigerator. They are the perfect portion for one person.

Queen Anne or Cella milk chocolate covered cherries, chocolate fudge pudding, chocolate chip cookies to dip in a chocolate fondue, Oreo double chocolate cookies, large ripe washed strawberries to dip in bowls of melted milk chocolate chips and melted white chocolate chips, several chocolate/cookie candy bars like Hershey's Milk Chocolate Bars, Hershey's Dark Chocolate Bars, Snickers, 3 Musketeers Bars, Milky Way, Nestle's Crunch, Reese's Peanut Butter Cups, M & M candies, and Hershey's Kisses and Hugs are in grocery stores.

You can melt chocolate chips or Candy Melts easily in your microwave to make your fondue or sauce and dip anything you enjoy in it. If it's too thick use heavy cream to thin it. Chocolate will burn easily, so melt and stir at thirty seconds to one-minute intervals only. Once chocolate is burned it's no good and must be thrown away. You can also melt almond bark in the same way, to make a vanilla fondue or sauce for dipping or you can use white chocolate chips. Large fresh ripe strawberries and stemmed jumbo maraschino pitted cherries are especially delicious dipped in either melted vanilla or chocolate Candy Melts. Mini cookies and the excellent line of Nabisco Fig Newtons, such as Strawberry Shortcake and Cherry Cheesecake are delicious dipped in Chocolate Fondue. You can cube poundcake or angelfood cake to dip in chocolate fondue. Puddings are available ready-made in delicious chocolate fudge in individual servings. Your supermarket's bakery can provide you with a moist chocolate pound cake. You can buy mini brownies and split them in half, fill the middle with German Chocolate Frosting then dip them in melted Candy Melts and make your own Chocolate Petit Fours that are so delicious to eat! Your grocer's frozen dairy case can supply the chocolate ice cream, having many flavors to satisfy your chocolate cravings.

The whole point is to simply buy or prepare some of the chocolate foods that you enjoy already and enjoy them in a decadent Chocolate Buffet anytime you have the need to feel loved and special. If you are counting calories, or diabetic, then you will need to use common sense and a lot of self-discipline when buying or preparing these decadent goodies. Occasionally, we just have to forget the calories and enjoy ourselves, but never forget to put your health first to consider the choices you make every day, and what those results could do to your health or affect your future life. Self-discipline requires moderation in whatever we do.


CHOCOLATE SOUFFLE
8 oz. chocolate chips
1 cup heavy cream
8 egg whites, beaten stiff
2 Tbsp. sugar
ramekins greased with butter then dusted with sugar

Preheat your oven to 400 degrees.
Make sure all your ramekins are butter sprayed and then dusted on the insides with sugar. Set them on a baking sheet.
In your microwave melt the chocolate chips and heavy cream, stirring them at one-minute intervals until smooth. Should take about 1-1/2 minutes on high. Cover and let this cool, while you are beating your egg whites in another bowl with an electric mixer. Add the sugar when they are beaten. Fold in the egg whites mixture to the melted chocolate and cream mixture until blended. Divide the batter evenly between your prepared ramekins. Bake for 15 minutes until puffed. Serve immediately and carefully as they will usually fall within five minutes of taking them out of the oven. Garnish with powdered sugar and fresh strawberry slices or fresh raspberries. Whipped topping can be added if desired instead of powdered sugar.
