moroccan cuisine is world famous for its subtle blending of spices, herbs + honey with meat + vegetables. it is a culinary heritage that has many influences: berber, arabic, jewish, french and african.
it is a cuisine that now rightly takes its place alongside the other world's refined national culinary arts. dishes cleverly prepared + as pleasing to the eye as to the taste.
here is but one favourite from many:
chicken tagine with figs:
ingredients
4 chicken breast - no skin or fat
4 tsp flour ,seasoned with pepper
1tsp olive oil
2 Cups butternut pumpkin, cut into thin 1cm rounds
2 cups sliced onion
3 cloves garlic, peeled and sliced
1/2 tsp Each of tumeric, ground cumin, ginger + cinnamon
a few threads of saffron
2 cups chicken stock
8 dried baby figs
fresh parsley or coriander to garnish
method
dust the chicken pieces with the seasoned flour.
heat the oil in a frying pan + cook the chicken until lightly golden.
remove from the heat
place the pumpkin in the base of a casserole dish + arrange the chicken
on top
add the onion to the pan with the garlic + all the spices
cook until the spices are fragrant + the onion soft, then pour in the
chicken stock + bring to the boil
pour the stock mixture over the chicken + add the figs
cover + cook in the oven at 160 degrees for about 45 minutes until
the chicken + vegetables are cooked + tender
garnish with fresh parsley or coriander
serve with rice or couscous
