Well, a Sullustan Jedi has yet to appear as far as I know (I'm quite behind in the comic's on-going series) he could always appear in the next two films. This was an extra parts custom, bascially I had a Jedi body and an alien head. The spark of inspiration didn't take long to follow. With Sullust actually being a named planet (and even appeared in original drafts of A New Hope) and with Lucas establishing major species in the prequels, I think we have a good shot of seeing this Jedi. The only thing that I don't think fits here is that he seems a bit tall for a Sullustan.
UPDATED - There was a Sullustan Jedi in some West End Games suppliment that I don't have, but found evidence of. The name doesn't sould anything like a Sullustan at all, but who am I to argue?
UPDATED AGAIN - Turns out the story he's in is in an issue of Star Wars Galaxy Magazine. An issue that I had. Must've been a memorable story huh?
