I'm not sure if this was meant to be the same droid we see in Jedi, but in the video game based off of Phantom Menace you meet Jabba at the pod race and he has a purple 2-1B interpreting for him. This was just a repaint.
UPDATE - Replayed the game - he's not an interpretter working for Jabba, he's just a pod race spectator!
