ICE CREAM

CARAMEL ICE CREAM

  • 5 eggs
  • 1 tsp. vanilla
  • 1 1/2 cups brown sugar
  • 2 tbsp. corn starch or flour
  • 1/2 gallon milk
  • 1/2 cup white sugar

Put milk on in double boiler,
and when hot stir in the yolks of eggs well beaten and the cornstarch or flour thoroughly mixed with white sugar to keep it from being lumpy
When this begins to thicken,pour into it, stir constantly, caramel made by putting brown sugar on skillet and stirring constantly until it is melted and begins to brown
When the caramel is dissolved in the hot custard, add the well beaten egg whites and cook few minutes longer
Let cool, add vanilla and freeze
