APPELLATION:               Vins de Pay's d'Oc

AREA OF PRODUCTION:   Western region of Carcassonne

GRAPE VARIETALS:          100%

VINEYARD AREA:            Produced from grapes on a 49 hectare property situated in the district of Puicheric, which is located 15 kilometers west of Carcassonne.

VINIFICATION RED WINES ONLY:  For many years we flew a famous Australian wine maker to our winery to personally craft the wines of RESERVE HENRI MARC in the style for which he had become famous throughout the wine world. Now our wine maker after studying the methods of our Australian friend, has mastered his technique and is more than capable of making the wines himself. I believe when you taste it, it will become immediately obvious that he has succeeded. 

During "maceration", the wines are stalked with intensive remounting in order to obtain the maximum extraction possible. The Cuvage after fermentation lasts two weeks with total immersion of the "Chapeau de Marc" in the juice. After malo lactic fermentation takes place,the wine is then aged for three months in French Oak Barrels.

The result of this process is a deeply intense wine with a beautiful garnet robe, a hint of spice and lots of fruit. They are basically generous wines with a rich silky texture and do not have the burnt after taste so prevalent in wines produced in warm climates such as the San Juaquin Valley. They should be consumed within 3 years of their birth and served at between 55 and 57 degrees.
