FAVORITE
SOUPS

By far the soup Diamondstarr likes most is tomato. Whether creamy or broth-based, she never fails to demolish a bowl! Here are some of ways to make it.

Rule #1 <>NEVER USE PRE-CANNED SOUPS! I always make it fresh. Canned soups contain way too much salt and chemicals.

Version #1
1 8 oz can of tomato sauce
1 8 oz can of milk
Heat together in a small saucepan.
Makes 2 servings.

Version #2
1 8 oz can of tomato sauce
1 cube or packet of bouillon
1 8 oz can of water
As above, heat together and serve.
Makes 2 servings

Version #3
1 15 oz can of chopped/sliced tomatoes
1 15 oz can of water
1 cube or packet of bouillon
2 cups assorted chopped veggies
(Use can use onions, mushrooms, peppers, brocolli, or whatever strikes your fancy.)
1 tsp herb (oregano, basil, cumin, or use your imagination!)
5 cloves garlic or 1 tsp granulated.
Simmer all ingredients together until veggies are tender. Serves 6-8

Version #4
1 15 oz can sliced/chopped stewed tomatoes
1 15 oz can milk
1 tsp herbs (as above)
Heat together and serve.
Makes enough for 6-8

Great with croutons and shredded cheese!

Diamondstarr also loves creamy soups like cream of mushroom (her all-time favorite!), and corn chowder. These take a little more care to make, but are delicious. You can also use these soups as gravy and serve over biscuits or noodles. They make great warmer-uppers for wintertime. (Yes, we do get cold here in Hawaii, especially Diamondstarr who almost always carries a jacket!)

Cream of Mushroom Soup
1 cup sliced mushrooms
1/2 cup minced onion
1 tsp dried parsley
2 tbl butter
2 cups milk
2 tbl corn starch or flour
Using a large heavy skillet saute mushrooms and onions in butter. Set aside. In a large saucepan mix corn starch or flour with milk. Heat until mixture comes to a boil and thickens. Add mushrooms. Remove from heat and serve. Ono! (That is how we say delicious in Honolulu!) Serves 2-4

Corn Chowder
1 10 oz can of creamed corn
1 10 oz can milk
2 tbl butter
Heat all ingredients together and serve.
Makes a generous helping for two.
