Georgia Peanut Cookies

For 2 1/2 dozen cookies you will need:

  • 1/2 cup soft butter or marg.
  • 1/2 cup of brown sugar
  • 1/2 cup of crunchy peanut butter
  • 1/2 tsp.vanilla
  • 1 egg
  • 1/2 tsp.baking soda
  • 1/4 tsp.salt
1.5 cups all-purpose flour

Preparation:

1) Cream butter with the sugar
and peanut butter
2) Add vanilla and egg
beating till fluffy
3) Stir in baking soda and salt
4) Blend in flour
mix until a stiff dough forms
5) Shape into walnut size balls
Place on lightly greased cookie sheets.
press with fork,crisscross,to flatten
6) Bake at 375 F for 10 minutes
or until lightly brown.

Cinnamon Lemon Cookies

For 6 dozen cookies you will need

  • 1 cup of sugar
  • 1/2 cup butter or marg.
  • 1 egg
  • 1 tsp.vanilla
  • 1.5 cups all-purpose flour
  • 1.5tsp.ground cinnamon
  • 1 tsp.baking powder
  • 1/2 tsp.grated lemon peel
  • 1/4 tsp.of salt
  • cinnamon sugar
Preparation:
1) In a mixing bowl,cream together
sugar and butter.
Beat in egg and vanilla
2) Combine the flour,cinnamon,
baking powder,lemon peel and salt.
Add to butter mixture.blend well.
3) Cover and refrigerate 2 hours
or until firm.
4) Shape dough into small balls,
about 3/4 in diameter.
Roll in cinnamon sugar to coat.
5) Set cookies 1-inch apart on lightly
greased cookie sheets.
6) Bake at 350 F for 10 minutes or until
edges are lightly browned.
7) Cool slightly on pan before removing
