Breakfast
Buttermilk Fruit Pancakes
Preparation Time: 10 minutes
Cooking Time: about 20 minutes to make the whole batch
Serves: about 10 - 4 inch pancakes
Amount Ingredient

1 C (140g) Flour
1 tsp Sugar
3/4 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
1 Egg, lightly beaten
1 C (2dL) Buttermilk
1/2 C (1dL) Peaches, bananas, blueberries, dried cherries,
dried cranberries, sauteed apples;
thinly sliced and lightly sugared
Sift together all the dry ingredients. Make a well in the dry ingredients and add in the egg and buttermilk. Combine with a few quick stokes. Do not over mix. Heat the pan or griddle. Test for readiness by dropping a few droplets of water on the pan. If the droplets bounce and sputter the pan is the
proper temperature. If the water disappears it
is to hot. Add the fruit to the batter and spoon the batter on to the griddle in about 4 or 5 inch size pancakes. When the top of the pancake is covered with airbubbles, gently check the bottom of the pancake with a spatula. If it is golden brown then turn the pancake and cook the other side. When cooked add to a warmed plate and stack with butter. Serve with maple syrup or a sprinkle of confectioners sugar and nutmeg.
Almost South of the Border Wrapped Eggs
Preparation Time: about 20 minutes (can assemble the night before)
Cooking Time: 15 minutes

Amount Ingredient

1 1/2 C (3dL) Green Salsa (your favorite red salsa is ok too)
4 med Tomatoes, finely chopped
1 T Olive oil (or oil spray)
2 Green Bell Peppers, thinly sliced
2 Green Onions, chopped
16 Eggs, beaten (or egg substitute)
1 tsp Salt
to taste Ground Black Pepper
1 1/2 C Shredded Monterey Jack cheese
8 (12 inch) Flour tortillas
1/2 C (1dL) Sour Cream
Preheat oven to 375F (190C), if not making ahead of time. Put the chopped tomatoes into a colander, and let them drain for 10 minutes or more. In a large skillet, heat the oil over medium heat. Add the bell peppers, and saute them until they are soft, about 5 to 10 minutes. Add the eggs, and turn the heat to low. Stirring occasionally with a wooden spoon, let the eggs cook until they begin to set. Remove the skillet from the heat and sprinkle in the salt, pepper, 1 cup Monterey Jack cheese, chopped green onions and the drained tomatoes; stir gently.
Spread about 1/8th of the egg filling down the middle of the
tortilla. Drop 1 tablespoon of the sour cream on top of the eggs. Fold in the sides of the tortilla to partly cover the egg mixture, then roll the tortilla, folding in the outer edges as you roll, to enclose the egg mixture completely. Continue this process with the remaining filling and the tortillas. Place the filled tortillas close together in a 9x13 inch (23x30cm) casserole dish (spray with oil spray). You can cover with
aluminum foil and chill over night or up to 24 hours.
Pour the salsa over the filled tortillas, and sprinkle them
with the 1/2 cup grated cheese. Cover the dish with foil, and
bake the casserole for 15 minutes (25 minutes if it has been
chilled). Serve hot.
Baked Cranberry French Toast
Preparation Time: about 10 minutes
Cooking Time: 55 minutes to bake and 15 for the syrup.
Serves: 8 servings

12 slices White bread, day old is best
(remove crusts if you like)
2 pkg (8oz 240g) Light Cream Cheese
1 C (160g) Dried Cranberries (you can also use fresh or frozen
Blueberries or other fruit are also nice in this
recipe. You can modify the amount based on your taste)
12 egg equiv Egg substitute equivalent to 12 eggs
2 C (1/2L) Skim milk
1/3 C (~75ml) Maple Syrup
Syrup

1 C (200g) Sugar
2 T Cornstarch
1 C (2dL) Water
1 C (160g) Dried Cranberries (I prefer fresh cranberries here)
Cut bread into 1 inch (2.5cm) cubes. Place half of the bread in a 13x9x2 (30x23x5cm?) baking dish coated with nonstick cooking spray. Cut cream cheese into 1 inch (2.5cm) cubes and place
over bread. Top with dried cranberries and remaining bread. In a large bowl, combine egg substitute, milk and syrup. Mix well and pour over bread mixture. Cover and chill 8 hours or overnight. Remove from refrigerator 30 minutes before baking. Cover and bake at 350F (180C) for 30 minutes.
Uncover and bake 25-30 minutes longer or until golden
brown and the center is set. To make the syrup, combine sugar and cornstarch, then add water into a saucepan. Make sure that the cornstarch is not lumpy. Bring to a boil over medium heat and boil for about 3 minutes stirring constantly. Stir in cranberries and reduce heat. Simmer for 8-10 minutes. Serve over French toast.
Baked Apple-Pecan Maple Pancakes
Preparation Time: 10 minutes
Cooking Time: 30 - 35 minutes
Serves: 9-inch (23cm) pie plate
Amount Ingredient

1 1/2 C (3dL) Ready-made pancake batter (if using dry mix
using the instruction to get 1 1/2 Cups)
2 T Butter, melted
1 C (~150g) Peeled and sliced thin Granny Smith apples
1/3 C (~35g) Pecans, chopped
3 T Maple syrup
1/2 tsp Ground cinnamon
1/4 tsp Ground cardamon
Preheat oven to 350F (175C) degrees. Pour melted butter in 9-inch (23cm) pie plate. Place apple slices in bottom of pie plate; sprinkle spices and pecans and drizzle syrup over apples; carefully pour batter on top. Bake at 350F (175C) degrees for 30 to 35 minutes or until top springs back when touched. Loosen edges and invert onto serving plate. Cut in wedges and serve with warm maple syrup and/or fresh apple butter.
Swedish Pancakes
Mix in a large bowl
1 1/3 cups (3 dl) of flour
1/2 teaspoon of salt
3 teaspoons of vanilla pouder
add while stiring
3 cups (8 dl) of milk
4 eggs
Whip until smooth. You can add 2-3 tablespoons of melted butter and use less butter to cook, but I think it's better not to.
Fry in fryingpan PAPERTHIN! Turning pancakes this thin takes loads practice so as thin as possible is ok =).
Serving tips:
Serve with ice cream or whipped cream and jam.
The french way is fill them with something good like mushroomstu, shrimpstu or spagettisause (bolognese) roll them up, cover with cheese and place in oven or microwave until the cheese has melted. But then they are called "creps" =).
A second way to make pancakes in Sweden is to butter a deep ovenpan and pour the stuff in there (1/2 inch thick), either add fried bacon or blueberries (not both) and bake in oven at 200-225C. If you stick a fork in it and the fork comes out clean, it's done.
Or bake in oven as above, but plain (no bacon or blueberries). Fill with spagettisause (bolognese) roll up, cover with cheese and bake again until cheese is melted.
