Salisbury Steak


1 can cream of mushroom
1 lb ground beef
1/3 c.bread crumbs
1 egg
1/4 c. finely chopped onion
1/2 c. mushrooms (if desired)

In bowl mix thoroughly 1/4 cup of the soup, beef, egg and onion. Add bread crumbs.
Shape into firm oval shaped patties.
Cook patties in skillet over medium heat until brown on both sides.
Drain excess fat. Stir in remaining soup 3/4 can of water and mushrooms (if desired) and retun patties to skillet.
Reduce heat to low. Cover.
Simmer 20 minutes or until meat in done. Turning patties occasionally.


Roast Beef Sandwiches


Round Roast
Beef Broth or bouillion
cloves (little)
Nutmeg
Cinnamin
Garlic
Parsley
Salt and pepper

Add all ingredients to Crock Pot.
Let cook all day.
Break up meat with a fork.
Serve on hard rolls. Eat!!


Meat Loaf

1-2 lbs. ground beef
1/4 -1/2 lb. ground pork
finely chopped onion
1 pkg. Meat Loaf Mix
1 egg
1/4 c. milk
Bread Crumbs
1 lg. can Stewed Tomatoes
Mozorella cheese (slices or shredded)Optional
Potatoes and carrots
salt, pepper, garlic salt

Combine beef, pork, egg, onion, seasonings, milk and meat loaf mix in bowl.
Mix well together using your hands.
Add bread crumbs to help hold together and continue mixing together.
Shape into loaf.
If filling center with cheese, make a deep groove into the loaf and add Mozarella cheese... mold meat over the cheese packing together firmly.
Put loaf into roasting pan and add potatoes and carrots.
Pour can of stewed tomatoes over meat and vegetables.
Bake 350 for 1 hour.
Turn temperature down to 250 and bake until ready to eat. At least another hour.
(Optional....you can add more cheese on top of meat loaf and cook additional 5-10 minutes before serving. Just until cheese melts.

Addition toppings.
Before baking spread ketchup over top of meat loaf and lay 2-3 slices of uncooked bacon on top.
Also stewed tomatoes are optional. They are not needed if you don't like them. Just bake everything without them. Meat makes it's own juice.


Cheesy Tators


2 lb bag hash browns
1 can cream of chicken
16oz sour cream
1 1/2 cup cheddar cheese (shredded)
1/2 cup chopped onion
1/4 cup melted butter

Combine all liquid ingredients then stir in potatoes.
Bake in 9 x 13 cake pan.
350 degrees for 60 minutes.
HINT: It's best to add the hot melted butter last, when you add potatoes.




Cabbage Rolls


1 head of Cabbage
2 cans tomato soup
1 can tomato paste
2-3 lbs ground beef
Instant Rice
small onion (chopped)
salt, pepper, garlic salt

Cut around the core of the cabbage, so leaves will open easier when hot.
Put the whole head of cabbage in large pot and cover with water.
Boil until leaves start separating and tender. 15 minutes or so. You can carefully remove each leaf as they open up with thongs.
Meanwhile, brown the ground beef and onion, in skillet, salt and pepper to taste.
Do not completely cook the meat but almost done.
Add a half of a can of tomatoe soup to meat and cook until hot. Add rice. (I just guess on this, probably around a cup or so of rice.)
Pour remaining soup (1 1/2 cans) into roasting pan and one can of water. Stir.
Spoon meat mixture into each cabbage leaf.
Fold sides of cabbage leaf over meat and roll up.
Place each one into the roasting pan with tomato juice.
Once you've finished making all the cabbage rolls,
spoon and smear tomato paste over each cabbage roll.
Spoon juice over them also and bake.
350 for 1 hour
Turn oven down to 250 and cook until done.
While baking, stir and spoon juice over the tops every so often to keep them moist.



Baked Steak


Round steak
Cream of mushroom soup
salt pepper and garlic

Pour Cream of mushroom soup into a baking dish, and mix 3/4 can of water.
Set aside.
Brown steak in skillet with butter.
(Brown quickly with skillet hot.) Do not cook clear through.
Salt, pepper and garlic the steak after turning once.
Place pieces of meat in the mushroom soup.
After frying, add a little water to the grease you just fried the steak in and pour some of this juice mixture into the baking dish with the steaks.
Bake at 350 for 1 hour.
Turn oven down to 200 and bake another hour or two until serving time.
Hint: The longer you cook at lower temperature the more tender the meat will be





Grams' Salmon Ball


1 lb can of red salmon, drained and deboned
1 8 oz package of cream cheese (softened)
1 T. lemon juice
2 t. grated onions
1 t. horseradish
1/4 t. salt
1/4 t liquid smoke
1 t. A-1 Sauce
1 T. cocktail sauce

Mix cream cheese, lemon juice, onions, horseradish, salt, liquid smoke, A-1 sauce & cocktail sauce.
Cream well and add salmon, Mix well
Form into two balls (or 1 ball)
Chill well, then roll into topping of nuts and parsley flakes.

Topping

1/4 t. salt
1/2 c. chopped nuts (pecans)
3 T. parsley flakes
These freeze well - use one and freeze one




Gram's Chicken Ball


1 8 oz package Cream Cheese
1 T Worcestershire Sauce
1 t Lemon Juice
2 T onions chopped fine
2 T ground pepper
2 T Oleo (margarine)
2 cans Underwood Chicken Spread
3/4 cup finely chopped walnuts

Mix all ingredients except nuts with mixer. Put in fridge until firm. Spread nuts on waxed paper. When firm, shape into a ball and roll in nuts.




Pinwheel Steaks
As seen on Mr. Food



London Broil or flank steak
1 cup Italian Breadcrumbs
6T Olive oil
1/2 t. Garlic Powder
2 t. parsley
6-Povolone cheese slices
Hard Salami

Mix breadcrumbs, garlic powder, parsley and 6 T. olive oil in bowl and set aside.

Slice steak in half to butterfly the London broil.



Open up steak to lay flat. Add salt and pepper.




Spread bread crump mixture on entire steak.


Layer with provolone slices.



Add a layer of Salami.


Roll steak lengthwise and hold together with toothpicks



Slice to desired thickness (about an inch)



Seer each side of pinwheels with olive oil in a hot skillet.




After seering, Bake @ 350 for 10 -15 minutes.
