Baked Squirrel


One cut up squirrel, 1 cup rice uncooked, 3 cups hot water, 1 teaspoon salt, 1/4 teaspoon pepper, 1 large onion chopped fine, 1 can (10 ounces ) cream of celery soup undiluted,1 large green pepper, thinly sliced. Set oven at 375 degrees. Brown squirrel on both sides in a skillet. Mix all remaining ingredients in a shallow 2 quart baking dish place browned squirrel on top and cover dish with aluminum foil. Bake for 1 hour or until squirrel and rice is tender. Serve hot it is really good. Denny says this is also good for Rabbit.

Lone Oak's Meat Rub

1 cup Garlic Salt
1/4 cup Onion Powder
1/4 cup + 1 tbsp. Hickory Smoke Salt
1/4 cup + 2 tbsp. Lemon Pepper
1/2 cup Chili Powder
2 tbsp. Cayenne Pepper
Mix all ingredients in a large bowl and store like you would any other spice. I use it heavier than most people, but I really like the taste. Use it before you put on any sauce when barbecuing.
