Pies

Chocolate Pie

1 cup sugar
2 tablespoons Flour
3 eggs
2 cups Milk
2 teaspoons of vanilla
3 tablespoons of baking cocoa
Mix sugar, cocoa and flour.
Beat egg yolks and add to sugar,
cocoa and flour. Add milk and vanilla.
Scald and pour into unbaked pie shell,
bake until set. Top with meringue.
Put back in oven, and slightly brown.

Japanese Fruit Pie

3 eggs, slightly beaten,
1 1/2 cups sugar
1 tsp. vanilla
1/2 cup melted butter
1/3 cup raisins
1/3 cup Pecans
1/3 cup coconut
1-(9 inch)pie shell
Add all ingredients and mix by hand
Pour into pie shell
Bake at 400 degrees for 15 min.
Reduce heat and continue baking
For 20-25 min. at 350 degrees

Peanut Butter Pie

1-8 oz. Cream Cheese
1/2 Cup Peanut Butter
3/4 Cup Powdered Sugar
4 Tablespoons Milk
Mix all this together well
Then beat in 8 oz. container of Cool Whip
Pour this in Graham Cracker Pie Crust
And let Chill, very easy and delicious

Cookies

Chocolate Chip Cookies

2 cups butter
4 cups flour
2 tsp. soda
2 cups sugar
5 cups blended oatmeal
24 oz. chocolate chips
2 cups brown sugar
1 tsp. salt
1-8oz. Hershey Bar (grated)
4 eggs
2 tsp. baking powder
2 tsp. vanilla
3 cups chopped nuts (your choice)
Measure oatmeal and blend in a blender
to a fine powder
Cream the butter and sugars
Add eggs and vanilla
Mix together with flour, salt
Oatmeal, baking powder, and soda
Add chocolate chips, Hershey Bar, nuts
Roll into balls and place 2 inches apart
On a cookie sheet
Bake for 10 min. at 375 degrees
Makes about 100 cookies

Oatmeal Raisin Cookies

1 cup shortening
1 cup brown sugar
1 cup graulated sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon cinnamon
3 cups oats
1 1/2 cups raisins
Mix the flour, baking soda salt,
and cinnamon in a bowl, set aside.
In a large bowl, mix shortening,
sugars, eggs, and vanilla.
Add the flour mixture, mix well,
add the oatmeal and then the raisins.
Bake at 350 degrees for 10 to 12 minutes.

Cakes

Banana Split Cake

2 cups graham cracker crumbs
1/2 cup melted butter
3 tsp. sugar
2 eggs
1 cup soft butter
2 cups powdered sugar
3-4 bananas
1 med. can crushed pineapple
1 lg. container of cool whip
3/4 cup nuts
1/2 cup chopped maraschino cherries
Mix the first 3 ingredients together
Then spread in a 9x13 dish
Press it down firmly
Beat the next 3 ingredients with mixer
Beat for about 15 minutes
Spread over unbaked crumbs in bowl
Cover with sliced bananas
On top of this spread pineapple
Then the whipped topping
Sprinkle nuts and cherries on top
Chill overnight

Earthquake Cake

1--Box Swiss Chocolate Cake Mix
1--Cup of Coconut
1--Cup chopped nuts
1--Stick of oleo margarine
1--8 oz. cream cheese
1--16 oz. Box of confectioners sugar
1--tsp. vanilla

1st.--Cream margarine, cream cheese, sugar and vanilla
Set that aside for now
2nd.--Grease and flour 9X13 pan ( or use pam )
3rd.--Mix cake mix according to directions on the box
Then in pan, put one layer of coconut
Then a layer of the chopped nuts
4th.--Then pour in the cake mixture
Then spread cream cheese mixture all over the top of cake mixture
Do not just pour in the center of pan
Then bake for about 55 minutes to 1 hour, at 350 degrees
Check so won't bake to long
Let set in pan 5 to 10 minutes then turn over on cake plate.
The longer the cake sets the better it is
Best to even set a couple of days

Misc. Desserts

Cherry Yum Yum

1/3 box graham crackers crushed
1/2 cup sugar
1 stick of butter
1 cup pecans chopped
1 large cool whip
1 8oz cream cheese-(softened)
1 cup confectioners sugar
2 cans cherry pie filling
Mix crumbs,sugar,butter,pecans
Then set aside
Add cream cheese,and sugar to cool whip
Whip until smooth, then set aside
Layer crumb mixture, and cream cheese mixture
Then cherry pie filling, until all is gone
Chill over night and enjoy.

Chocolate Eclair Dessert

2 pkgs. (3oz.) Vanilla Instant Pudding
1 (8oz.) container Cool Whip
3 Cups of milk
2 Box's Graham Crackers
....
Icing:
3 T. melted butter
3 T. milk
1/2 cups powdered sugar
1 tsp vanilla
2 ozs. Unsweetened chocolate squares
2 tsp. White karo syrup
Then butter a 9x13 dish or pan
Make pudding using milk and fold in cool whip.
Layer whole graham crackers and pudding in pan.
Such as Crackers then pudding, then crackers.
Until gone, making sure you have crackers on bottom as last layer.
To make icing, mix all the ingredients together.
And beat until smooth.
Then spread the icing over the top
Refrigerate for at least 12 hours
