Meat and Potato Quiche

3 tablespoons salad oil
3 cups coarsely shredded raw potato
1 cup grated Swiss, cheddar cheese or other
cheese of your choice
3/4 cup cooked diced chicken, ham, bacon or
browned sausage
1/4 cup chopped onion
1 cup evaporated milk
2 eggs
1/2 teaspoon salt
1/8 teaspoon pepper

Preheat oven to 425 degrees. Rinse shredded potatoes in cold water
and squeeze dry. In 9" pie pan, stir together potatoes and oil. Press
evenly into pie crust shape. Bake at 425 degrees for 15 minutes
until just beginning to brown. Remove from oven. While potatoes are
cooking, in a bowl beat together the milk, eggs, salt and pepper.
When you remove the potatoes from the oven, layer on the cheese,
meat and onion. Pour egg mixture onto other ingredients. Return to
oven at bake at 425 degrees about 30 minutes or until lightly browned
and knife inserted 1" from edge comes out clean. Allow to cool 5
minutes before cutting into wedges.

Yield: 6 servings.
