Chicken Tortilla Soup
4 cooked chicken breasts cubed (baked, grilled, or cooked in the pot)
4 cans of fat free chicken broth
½ onion chopped fine
2 Tbs. Finely chopped cilantro
2 cloves crushed garlic
2 cans chopped Mexican tomatoes (like Ro-tel)
1 lb. bag of frozen mixed veggies
2-4 dashes of red pepper
Garnish:
Fat free cheddar
Baked Tortilla chips
Put everything in the crock pot to cook on low for 8-hours.
Yield: About 8 servings
