Achiote Chipotle Rub

2 Tbsp achiote seeds
2 sticks cinnamon (2-3 inches each)
2 dried chipotle pepper
2 Tbsp epozote
2-3 teaspoons dried orange zest
1 tsp ground cumin
2 tbsp. black peppercorns

Combine all in a spice grinder or blender and process until ground. Store in an airtight container in the freezer for about 3 months.

Cook's Notes: Recommended cuts; chicken breasts-4 to 6 hours, wings-6 to 8 hours, hamburger-4 to 6 hours, beef kabobs-4 to 6 hours, spare ribs-8 hours to overnight
