Apple Cinnamon Muffins
2 large apples, peeled, diced
1 tsp lemon juice
1 1/2 tsp cinnamon
pinch nutmeg
2 1/2 cups flour
4 tsp baking powder
1/3 cup white sugar
1/3 cup brown sugar
2 eggs
1 cup milk
1/2 cup butter, melted
Combine apple with lemon juice, cinnamon, and nutmeg, Reserve. Combine flour, baking powder, brown sugar, white sugar in large bowl, mix well. Beat eggs with milk and melted butter. Pour wet ingredients over dry ingredients, and combine only until blended. Stir in apple mixture. Spoon mixture into buttered muffin times. Bake in preheated 400° oven for 25 minutes.
