Apple Muffins
1/2 cup shortening
3/4 cup sugar
2 eggs, beaten
2 tsp vanilla
1 cup white flour
1 cup whole wheat flour
1/2 tsp salt
2 tsp baking soda
1 tsp cinnamon
4 Tbsp cream
3 cups grated peeled apple
Mix shortening and sugar together. Add beaten eggs and vanilla. Beat well. Add dry ingredients alternately with cream. Fold in apple. Bake at 350° for 20-25 minutes.
Yield: 20 large muffins
