Apple Muffins II
1 cup chopped apples
1/2 cup sugar, divided
2/3 cup milk
1 egg, well beaten
1/4 cup butter
2 cups flour
1/2 tsp salt
1/2 tsp cinnamon
4 tsp baking powder
Topping
4 Tbsp butter, melted
2 Tbsp sugar
1 tsp cinnamon
In a large bowl, mix together apples and 1/4 cup sugar. Blend in egg. Add milk and butter and mix together lightly. Sift in flour, salt, cinnamon, remaining sugar and baking powder. Mix together well. Spoon into greased or paper-lined muffin tin. In separate bowl, mix together topping. Add topping to each muffin. Bake at 350° for 20 minutes.
Yield: 20 muffins
