Banana Walnut Muffins
3/4 cup chopped walnuts
2 cups all purpose flour
1 Tbsp baking powder
1/2 tsp salt
1 stick butter, softened
3/4 cup brown sugar
2 eggs
1 1/2 tsp vanilla
2 cups mashed bananas
Toast nuts in oven for about 8-10 minutes then set aside.
Combine flour, baking powder, and salt.
In another bowl cream butter, sugar and vanilla; beat in eggs one at a time, then add bananas and beat until smooth and creamy.
Stir dry ingredients into banana mixture just until flour disappears (over mixing will cause muffins to be tough); lightly stir in nuts.
Bake 20 -25 minutes at 375°.
Yield: 12 large muffins
