Bourbon Chicken
2 lbs boneless chicken breast-cut into bite size pieces.
1-2 Tbsp olive oil
1 clove garlic crushed
1/4 tsp ginger
1/2 tsp crushed red pepper
1/4 cup apple juice
1/3 cup firmly packed light brown sugar
2 Tbsp catsup
1 Tbsp cider vinegar
1/2 cup water
1/3 cup soy sauce
1 Tbsp corn starch
1 Tbsp water
Heat oil in large pot then add chicken pieces and lightly brown for
about 6-7 minutes. Remove chicken from pot and put aside. Now add
ingredients ginger through soy sauce to pot and heat over med heat until dissolved. Add
chicken bring to a boil and then simmer for about 20 minutes. In a
small bowl mix corn starch and water and add to chicken and sauce just
before serving to thicken.
Cook's note: I typically double the sauce with the exception of the amount of soy
sauce. Doubling the soy sauce makes it too salty, so I usually just add a little more.
