Carrot Cake II
3 cups flour
2 cups sugar (white)
1 cup coconut (optional)
2 1/2 tsp baking soda
2 tsp grated orange peel
2 1/2 tsp cinnamon
1 tsp salt
2 cups grated carrots (about 4 medium)
1 1/4 cup vegetable oil
3 eggs
1 - 11 oz. drained mandarin oranges
Mix all wet ingredients, then add dry. Pour into sprayed 9 x 13 pan.
Bake 45 - 50 minutes at 350°. Cool. If you omit the coconut use 15 oz can of mandrain organes (drained).
Frosting
8 oz cream cheese (soften)
2 Tbsp butter, melted
1 tsp vanilla
3 cups powdered sugar
Mix all ingredients. Spread on cooled cake top with 1/2 - 1 cup chopped walnuts.
