Pecan Cream Cheese Pie

6 oz. cream cheese
1 tsp vanilla
1/4 cup sugar
1/4 tsp salt
1 egg

Beat together until thick and smooth. Reserve.

2 eggs
2 Tbsp sugar
3/4 cup corn syrup (light or dark)
1 tsp vanilla

Beat eggs until whites and yolks are just combined. Add syrup, sugar, vanilla, and beat gently until blended.

1 unbaked 9" pie crust
1 1/4 cups chopped pecans

Spread cheese mixture into crust. Sprinkle with pecans. Gently pour syrup mixture over pecans. Bake at 375° for 35-40 minutes until center is firm to touch.

Cook's note: Place pie on cookie sheet while baking to catch leaks.
