Cherry Cream Cheese Muffins

4 ounces cream cheese
1 tablespoon lemon juice
1 teaspoon almond extract
1 teaspoon vanilla extract
2 eggs
1/2 cup milk
4 tablespoon butter, melted
1 3/4 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 1/2 tablespoon sugar
1 cup frozen sweetened red tart cherries, thawed, drained & halved
TOPPING:
3/4 C. sugar
1 teaspoon cinnamon

Beat Cream Cheese with lemon juice and flavorings until smooth. Add eggs and beat. Beat in milk and butter.

Sift in flour, sugar, baking powder and soda and beat until well mixed. Carefully fold in cherries. Spoon into greased and floured muffin pans, filling 3/4 full.

Mix sugar and cinnamon and sprinkle on the top of each muffin. Bake at 350º for 30 minutes.

Cook's note: I used 12 muffin tins but they came out kind of small. Next time I think I will only use 8.
