Chicken Cacciatore
1 1/2 lb. Boneless, skinless chicken breasts or 2 1/2 lb. - 3 lb. chicken parts (w/bone), skin removed
1 can (16 oz.) stewed tomatoes
1 onion, sliced
1 tsp Italian herb seasoning
1 can (8 oz.) tomato sauce
2 cups frozen peas
Spray a large saucepan with non-stick coating. Add chicken and remaining ingredients, except peas. Cover and simmer, stirring occasionally, for 25-35 minutes. Add peas (or canned green beans) and cook for 10 minutes.
Yield: 6 servings
Cook's Note: I thought it needed some garlic, so I added a tiny bit of garlic powder.
