Chicken Chipotle with Rice
I threw three frozen chicken breasts in the CP, a jar of Pace Cilantro salsa (that is all they had at the store), half a can of Chipotles (around four?) and half the can of its sauce, and a small can of El Torito fire-roasted red enchilada sauce
I turned the CP on at 12 noon, at HIGH, then turned it to LOW at 3 pm.
Then, I had some white rice laying around, so I threw a cup of plain, white, uncooked rice in there at 3 pm.
Everything was ready at 5:30...yummy, shreddable, Chipotle chicken AND saucy and very spicy rice to go with it. I steamed some corn tortillas, got out the shredded cheddar and sour cream. I also prepared some shredded lettuce, chopped tomatoes and sliced avocados, and made little tacos. I served the rice on the side. We also had satsuma oranges and green salad. It was VERY good.
The rice is pretty spicy, so don't give it to the kids!
