Chicken Enchiladas
Boil chicken and shred into pieces
In skillet melt 1/4 cup margerine
add 1 diced yellow onion~~cook until soft
Add one can cream of mushroom
Add one can cream of chicken
Add 1 cup chicken broth
Add 1 can green chile
Then add your chicken
Salt and pepper to taste and let simmer
In casserole dish lay down 1/2 bag corn tortillas--tear into 1" strips
Then pour in half the mixture
Then put in the rest of the tortillas and then the rest of the mixture
Cover with I use a whole bag of the orange and white cheese (shredded)
Then bake at 350 until the cheese melts. I serve it with refried beans and lettuce tomatoes, avocados, etc.
Cook's note: I don't have exact measurments because I just throw the stuff together.
