Chicken Chille Relleno
Chicken breast halves with skin and bones
Whole green Chilles, Mild (canned)
Monterey Jack cheese
Stuff the chilles with the cheese. Loosen skin from chicken breast and insert stuffed green chille, open side first, pulling skin up to cover the chille. Bake in a 350° oven about 40 minutes, sprinkle shredded cheese on top of chicken and bake 5 more minutes to melt the cheese.
