Chicken Rub
2 Tbsp Pickling Salt
1 Tbsp Garlic Powder
1 Tbsp Onion Powder
1 tsp ground Thyme
1 tsp Sage
1 tsp Paprika
1 tsp Black Pepper
Mix well and store in an airtight container with a shaker top. Add rosemary, tarragon, basil or other
herbs as desired, in the same single-teaspoon increments. Best when utilized with a basting mix to
help the seasonings adhere.
For a Chicken Basting mixture, combine 1/3 cup oil with 1/3 cup vinegar or lemon juice and 1/3 cup
water. Sprinkle on the seasoning mix or chicken rub and place on the grill after basting. Repeat the
process as you grill. Remember, the dark meat cooks more slowly than the white, so start your
grilling with the legs and add the breasts after a turn or two.
