Quick Orange Chipotle Vinegar
1 quart white wine vinegar
Julienned peel of 2 large juice oranges, white pith removed
3-4 dried chipotle peppers
Bring vinegar to gentle simmer in a nonreactive pot. Add the peel and peppers. Gently simmr over low heat until the chipotles are reconstituted, about 8-10 minutes. Cool to room temp, and let it stand overnight. At this point you can either strain the vinegar or let it steep for additional heat. Pour into sterilized glass jars and seal with plastic wrap and rubber bands. Store in a cool, dark place. The vinegar will hold its strength for 3-4 months.
