Chipotle Chocolate Bars

4 tablespoons (1/2 stick) unsalted butter, cut into 8 pieces
3 ounces bittersweet chocolate, coarsely chopped
1/3 cup granulated sugar
1 teaspoon finely chopped canned chipotles, plus 1 tsp. of the adobo sauce
1 tsp vanilla extract
1 large egg
1/3 cup all-purpose flour

Preheat oven 350°. Coat an 8-inch square baking pan with nonstick oil spray. In medium saucepan over medium heat, stir the butter and chocolate until both are nearly melted. Remove from heat and stir until completely melted. Blend in the sugar, chipotles and adobo sauce, and vanilla. Working quickly to prevent curdling, whisk in the egg. Stir in the flour to make a smooth batter.

Spread batter in the pan. Bake until edges pull away from the sides of the pan and the center is just firm, 20-25 minutes. Let cool in pan for at least 10 minutes before cutting.
