Chipotle Rub Chipotle Rub

1/4 cup Madeira wine
2 Tbsp low-sodium soy sauce
1 Tbsp worcestershire sauce
1/4 cup chipotle seasoning (recipe to follow)
1 1/2 Tbsp grated orange zest
4-5 cloves garlic, minced and pressed

Combine all ingredients in blender or food processor until smooth. Thi srub will keep in an airtight jar for 2-3 weeks in the refrigerator.

Chipotle Seasoning
2 Tbsp ancho chili powder
2 Tbsp New Mexican chili powder
1 inch cinnamon stick
2 tsp cumin seeds
1 Tbsp dried Mexican oregano
1 Tbsp kosher or sea salt
3-4 dried chipotle peppers
Dried peel from 2 juice oranges

Combine all ingredients in a spice mill or blender and grind to a coarse powder. Store in an airtight jar. Thi will keep its potency in the freezer for 3-4 months.
