Grilled Chipotle-Marinated Pork

2 pork tenderloins, 10 oz each trimmed of fat
3 canned chipotle chiles in adobo sauce, seeded
2 Tbsp lime juice
3 Tbsp honey
2 large cloves garlic
1 Tbsp soy sauce
2 tsp ground cumin
1/4 cup chopped fresh cilantro

Cut each tenderloin in half crosswise. Set aside. In a blender, combine the chiles, lime juice, honey, garlic, soy sauce, and cumin. Blend until smooth. Stir in the cilantro. Transfer half o the mixture to a shallow, nonaluminum bowl. Reserve the other half. Add the pork to the bowl and turn to coat. Cover and refrigerate 4-6 hours.

Prepare a fire in a grill or preheat a griddle over med-high heat.

Coat the grill rack or griddle surface w/nonstick cooking spray. Remove the pork from the marinade and place on the grill rack about 6-8 inces from the fire or on the griddle. Cook until seared on the first side, about 4 minutes. Turn over the pork and spoon the reserved chile mixture evenly on top of the pieces. Tent them with aluminum foil. Continue to cook until the pork is just firm to the touch and pale pink when cut into at the thickest point, about 4 minutes.

Transfer to a cutting board and let rest for about 7 minutes. Slice and arrange on plates.
