Chocolate Freak Out

1 lb semisweet or bittersweet chocolate, cut into pieces
10 Tbsp unsalted butter
4 large eggs, separated
2 Tbsp all purpose flour
pinch of salt
2 Tbsp sugar

Preheat oven to 425°. Butter the sides and bottom of an 8" springform pan. Place an 8 inch round of wax paper on the bottom. In the top of a double boiler over medium heat, melt the chocolate, making sure no water touches it. Add the butter and mix to incorporate it as it melts. Cool. In a medium bowl, beat the egg yolks until fluffy and lemon colored (about 5 mins.). Add the flour and continue beating until just incorporated. In another medium bowl beat egg whites and salt until the whites begin to hold their shape. Add the sugar and continue whipping until they are thick and hold their shape but are not dry or overly stiff. Add the cooled chocolate mixture to the egg yolks, mixing well. With a rubber spatula, slowly add 1/3 of the egg whites to the chocolate mixture, mixing from the bottom of the bowl to blend the whites into the chocolate. Add remaining whites and continue blending gently until there are no white streaks left. Pour the mixture in the prepared pan. Bake the cake for exactly 15 minutes. (It will look almost raw, but will continue to cook as it cools). Remove from oven.
