Clam Chowder

~3 Tbsp butter
Celery, chopped finely (I used about 2 cups)
1 onion, chopped finely
5-6 peeled potatos, big and little chunks
2-3 minced garlic cloves
1 1/2 cup water
1 bottle clam juice
1 can chicken broth
4 cans of chopped clams, drained
1 carrot, chopped finely
1 pint half and half
Thyme
Salt & Pepper
Tabasco 1/2 cup melted butter combined with 1/2 cup flour

In a stockpot type of pan, saute the onion, celery, and garlic in butter until softened.

Add potatos, water, clam juice, chicken broth to above and simmer covered for 30 minutes.

Add thyme, salt and pepper, tabasco, carrot and clams and simmer for 15 minutes.

Add half and half and simmer for another 15 minutes.

Slowly add the butter/flour mix using a whisk until desired consistency.
