Coconut Macaroons

2 eggs whites
1/2 tsp vanilla
2/3 cup sugar
1 1/3 cups flaked coconut

Grease cookie sheet, set aside.

Beat egg whites and vanilla with a electric mixer on high speed till soft peaks form. Gradually add sugar, about 1 tablespoon at a time beating till stiff peaks form. Fold in Coconut.

Drop mixture by rounded teaspoons 2 inches apart on cookie sheet and bake in 325° oven for about 20 minutes or until edges are browned.

Yield: about 30 cookies
