Cranberry Surprise Loaf

6 oz cream cheese, softened
1 egg
2 cups flour
1 cup sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup apple juice
1/4 cup butter or margarine, melted
1 egg, beaten
1 1/2 cups coarsely chopped fresh cranberries
1/2 cup chopped nuts

Heat oven to 350° Grease and flour bottom only of 9x5 loaf pan. In small bowl, beat cream cheese fluffy. Add egg and blend well. Set aside

In large bowl, combine flour, sugar, baking powder, baking soda,and salt. Stir in apple juice, margarine and beaten egg. Fold in cranberries and nuts. Spoon half of mixture into pan. Top with cream cheese mixture. Spoon the rest of the batter into the pan and bake for 65-75 minutes. Cool in pan for 15 minutes, then remove and cool completely. Wrap and store in the refrigerator.
