Crispy Cheese Chicken
4 boneless, skinless chicken breasts
1 Tbl lemon juice
3/4 cup fat-free mayonnaise
1/4 tsp garlic powder (I use 1 tsp)
1 cup Alpine Lace Free & Lean fat-free cheese, shredded
2 cups crushed corn flakes
Preheat oven: 375°F. Mix lemon juice & garlic powder with mayonnaise & stir until well blended. Dip & roll chicken breasts first in mayonnaise, next in grated cheese & finally in crushed corn flakes until coated well on both sides. Place coated chicken breasts on a baking sheet sprayed with nonstick cooking spray. Bake at 375°F for 30-35 minutes or until golden brown.
